Please Note:
There is already a great deal of interest, and some courses are already booked up. But do not despair, anyone genuinely interested will be catered for, and many of the classes will be held again to accommodate people who may have missed out this time around.

Places are strictly limited and will be reserved on a first come - first served basis.
To ensure your place in any class, payment should be made in full a week or more in advance of the course.
Prices are as usual unless stated.

All courses are hands on, cost 90 euro and take home everything you make;

We are fully insured HACCP compliant and health board approved.

Tuesday 31st January and 7th February: New Easy cooking dinners: Learn to make spicy red lentil, chilli and coriander soup, Chicken stuffed with garlic and cheese, roast vegetables, vegetarian moussaka, and pork, mushroom and mustard casserole, with lots of ideas for getting ahead and all without a jar or packet in sight! Price €90

Tuesday 21st & 28th February: Easy dinners 2 Quick, simple to prepare and made from scratch. Spicy beef casserole with braised red cabbage. Chicken and chorizo bake with lemon and herb couscous. Stuffed pork chops with mushrooms and cream. Creamy fish pie with haddock, salmon and prawns. Price €90

Tuesday 6th &13th March: New Pastry class In this all new pastry class we will be making a variety of pastries to make these dishes. Beef & mushroom pie, Apple tart tatin, Cheese & onion rolls, and individual pear clafoutis. Price €90

Tuesday 20th &27th March: Bread Class In this ever popular class, we will be making some new breads using a biga starter including, Italian ciabatta, rosemary and sundried tomato bread, no knead brown treacle rolls and an Irish tea brack. Price €90

Tuesday 3rd & 10th April: Cake Baking Learn to make light delicious cakes in this course we will be making a Chocolate roulade, Battenberg, coffee and walnut sponge with mocha frosting, and a pineapple upside down cake. €90

 

Saturday 4th February: Introduction to sugar craft 10 am-4.00 Beginners cake decorating class. This class takes you through splitting and levelling a cake and covering the cake and board with sugar paste, simple piping with royal icing and making some easy sugar roses to decorate. Price €100

Cupcake day Saturday 11th February: (just in time for Valentine's Day <3  )   10am -4.00 Make the perfect red velvet cupcakes with American frosting and lemon cupcakes with Italian meringue buttercream, how to pipe swirls and finish with sugar leaves and flowers. Price €100

Saturday 18th February: Improver’s Cake decorating:10am-4.00 This course will advance your skills, you will learn to dowel and tier a celebration cake and make a themed cake with cutters and handmade blossoms and leaves. Price €100

Saturday 3rd March: Introduction to modelling figures from sugar10am-4.00 This course shows the basics of making your own little figures to decorate your cakes, starting with a baby on a blanket, sugar fairies, a dog and a clown. €100

Tuesday 6th & 13th September 2011:               Pastry Class
Learn to make a variety of pastries- Choux pastry for Chocolate eclairs, Savoury pastry for caramelised onion and goat's cheese tartlets, rich sweet pastry for Tart au Citron and short pastry for Cornish pasties.90 euro

Tuesday 20th &27th September 2011:               Bread class
Learn to use fresh to produce a range of products such as-Country oatmeal pan, red onion bread, bagels, brioche, wholemeal scones and cheese and chive soda bread.90 euro
            
 

Tuesday 4th & 11th October 2011:                  Cake Baking   
From scratch make light and delicious cakes &bakes-Classic victoria sponge, carrot cake with American frosting& marzipan carrots to decorate, butterscotch cake and a European fresh cream and pineapple torte.90 euro


 
 

Tuesday 18th & 25th October 2011:                  Winter Soup & Casseroles
Learn the basics of homemade soups, to include Mixed Veg and one other soup. One-pot winter casseroles such as an Irish Hot-Pot, Moroccan Tagine with spicy herb couscous, and nourishing Beef Stew with Parsley Dumplings. These are easy dinners for family meals or entertaining.90 euro
 

Tuesday 1st & 8th November 2011:                   Cooking Class- More easy soups and dinners
Thai spicy chicken noodle soup. Beef Chilli with guacamole, cheese & salsa. American chicken with wholegrain mustard cream sauce. Chickpea and tomato and chorizo soup, and easy Italian salmon with salsa Verde.90 euro
 

Tuesday 15th & 22nd November 2011:              Italian cooking
Learn to make your own homemade pasta dough for Lasagne from scratch, Spinach and Ricotta Cannelloni, Bolognese and a Butternut Squash and Sage Ravioli. Plus potato gnocchi with pesto. .90 euro

Please do look out for demo evenings where I will be inviting guest chefs to come and give a demonstration where you will just sit down and relax with a glass of wine and watch the demonstration and then taste everything.. I will also demonstrate a winter dessert which we will have with tea and coffee at the end. cost of this is likely to be in the region of 30 euro including everything. A fun evening out for individual s or groups!! I am also holding sugar craft/cake decorating classes on Saturdays Fethard Road Clonmel. Hands on ..beginning with a cupcake bake and decorate day, we will go through how to make the perfect cupcakes, different flavours and frostings including Swiss meringue buttercream and strawberry fondant icing and how to pipe swirls, roses and top with easy flowers, perfect for any celebration birthday or party.. Cost 90 euro for the day starting mid-September. Beginner's sugar craft comes after that. You will learn how to tier, crumb coat and cover your cake with sugar paste, how to pipe borders, and decorate with a sugar roses and leaves.
